Dry beans, a staple legume crop, are cultivated extensively across the globe, with leading producers including India, Brazil, Myanmar, the United States, and China. The history of dry bean farming traces back thousands of years, with archaeological evidence suggesting their domestication in both the Americas and Asia. In the Americas, beans were one of the "Three Sisters" crops—alongside maize and squash—cultivated by Indigenous peoples as early as 7,000 years ago. In Asia, varieties such as mung and adzuki beans have been grown for millennia. The Columbian Exchange in the 15th and 16th centuries facilitated the global spread of New World bean species, such as the common bean (Phaseolus vulgaris), which rapidly integrated into European, African, and Asian agriculture. Today, dry beans are valued not only for their protein content and role in food security but also for their ability to fix nitrogen, improving soil health and sustainability in diverse farming systems worldwide.
