Green garlic, the young, tender shoots of garlic plants (Allium sativum), is cultivated primarily in China, India, South Korea, and Egypt, which are among the world’s top garlic-producing countries. China overwhelmingly leads global garlic production, accounting for over 70% of the world’s supply, and has a long tradition of harvesting green garlic both for culinary use and traditional medicine. India, with its diverse climates, has also become a major producer, especially in the states of Madhya Pradesh and Gujarat. South Korea and Egypt contribute significantly, with green garlic playing a role in local cuisines and export markets. Historically, garlic has been farmed for thousands of years, originating in Central Asia and spreading through ancient trade routes to the Middle East, Mediterranean, and beyond. The practice of harvesting green garlic likely developed as farmers thinned their garlic crops in spring, discovering that the immature plants offered a milder flavor and unique culinary uses. Today, green garlic is valued worldwide for its fresh taste and is grown both commercially and in home gardens, reflecting a long history of agricultural adaptation and culinary innovation.
