The Chinese mitten crab (Eriocheir sinensis) is a medium-sized burrowing crab native to East Asia, easily recognized by its furry, mitten-like claws. Highly prized as a delicacy in Chinese cuisine, particularly during the autumn months, this species supports a significant fishing and aquaculture industry. China is by far the leading country in both wild harvesting and large-scale farming of mitten crabs, with the Yangtze River Delta being a traditional stronghold. In addition to China, Taiwan and parts of Korea also harvest the species, though on a much smaller scale. Outside its native range, the mitten crab has become an invasive species in Europe and North America, but commercial fishing is limited or prohibited in these regions due to ecological concerns. The Chinese mitten crab industry is valued for its contribution to local economies and culinary traditions, with China dominating global production and export.
