Spinach (Spinacia oleracea) is a leafy green vegetable that originated in ancient Persia (modern-day Iran) and spread to China in the 7th century, where it became known as "Persian vegetable." It reached Europe by the 12th century, gaining popularity in Mediterranean diets. Today, China is by far the world's leading producer of spinach, accounting for over 90% of global production, thanks to its vast agricultural lands and favorable growing conditions. Other significant spinach-producing countries include the United States, particularly California, which supplies much of North America's spinach, as well as Turkey and Japan. Spinach farming has evolved from small-scale traditional plots to large commercial operations, with advances in irrigation, pest management, and crop breeding improving yields and quality worldwide.
